Roccafiore is located the territory of Todi. Ninety hectares immersed in a breathtaking landscape, an island surrounded by greenery, where guests can taste natural wines, have lunch, dinner and relish typical products. The protection of the environmental balance of plants, the choice of native vines, the care of the soil, the use of traditional practices are part of the continuous search for qualitative excellence.

IL ROCCAFIORE – Umbria Sangiovese IGT (Red)
Variety: 100% Sangiovese
Vinification: after a soft pressing, the vinification is carried on in steel tanks, where must is kept for around 18/20 days to macerate with the peels and the wine-crushing is hand-made on a daily basis. The natural fermentation takes place with a careful monitoring of temperatures
Maturation: 24 months in large Slavonian oak barrels (50 Hl) and 6 month in bottle
Production: 12.000 bottles
Color: ruby-red wine
Perfume: tones of ripe plums, small red fruits, tobacco, liquorice
Taste: with a good structure, great class and elegance. In spite of its sophisticated typicality, it is an expression of the territory
Alcoholic content: 14,0%
To be served: 16/18°C

Variety: 70% Sangiovese, 15% Sagrantino, 15% Cabernet Sauvignon e Merlot
Vinification: The grapes are carefully selected and the wines made separately in stainless steel vats where the musts are left for 10/12 days to macerate with their peels, the fermentation occurs naturally with controlled temperaturesand the fermentation process is carried out in steel vats, where temperatures are strictly controlled
Maturation: 12 months in Slavonian barrels/French oak barrique, clarification with natural sedimentation by decanting
Color: Intense ruby- red wine
Perfume: Small red fruits, ripe plums, sweet spices
Taste: With a dark ruby red, nose is remarkable for its intensity and persistence, providing a large aromatic volume marked by oak, by a fruity and spicy sensations of cherry and blackberry. It’s a persuasive wine, able to express a unique class and elegance

FIORFIORE – Umbria Grechetto IGT (White)
Variety: 85% Grechetto di Todi, 15% Trebbiano Spoletino
Vinification: the grapes are harvested when they are perfectly ripe and gently pressed, the must is left to decant naturally and the fermentation process is carried out in steel vats, where temperatures are strictly controlled
Maturation: 6 months in stainless steel vats and 1 month in bottle
Production: 25.000 bottles
Color: straw-yellow wine with golden lights
Perfume: bouquets of white flowers, its fragrance has pleasant pink grapefruit and green apple notes
Taste: dry but is very fresh and crispy, adequately sparkly, the taste lingers
Alcoholic content: 12,5%

Variety 40% Sagrantino, 30% Montepulciano, 30% Sangiovese
Vinification Mechanical pressing, maceration on the peels for about 22/24 days, fermentation at controlled temperature with natural yeasts in stainless steel tanks, racking and soft pressing of the peels
Maturation: 24 months in French barriques, then 6 months in bottles
Color: Ruby red with dark garnet reflections
Perfume: Ripe and pleasing red fruit, in harmony with the delicate vanilla aromas given by aging woods.
Taste: Strong but soft and velvety, with a persistent and harmonious aftertaste
Service: 18/20 ° C

Variety: 100% Sagrantino di Montefalco
Vinification: Mechanical pressing, maceration on the peels for about 10 days, fermentation at controlled temperature with natural yeasts in stainless steel tanks, racking and soft pressing of the peels
Maturation: 18 months in French barriques and large 50 Hl Slavonian oak barrels, after assembly and bottling at least 6 months in bottle
Color: Intense ruby red, with violet reflections, almost impenetrable
Perfume: The notes of blackberry and small berries alternate with spicy and mineral sensations
Taste: Intense and elegant, great tannin unique in its kind, able to evolve with class, the expression of a territory
Service: 18/20 ° C

Variety: 100% Moscato giallo
Vinification: 4 months natural drying in boxes, mechanical pressing of the grapes and natural decantation of the must, fermentation at controlled temperature in stainless steel tanks
Maturation: In steel tanks for 6 months, then 1 month in bottle
Color: Intense golden yellow with amber reflections
Perfume: Note of ripe white peach followed by fragrances of yellow flowers
Taste: Great balance between sweetness and softness, supported by good acidity
